What is HACCP?
HACCP stands for “hazard analysis and critical control points”.
HACCP is an internationally recognized concept that serves to identify and control risks in food production at an early stage. This control system does not just scrutinize the end product. Instead, the aim is to identify and eliminate potential hazards at all stages and steps of production.
The so-called “critical points” in the production and handling of food are crucial here. It may be necessary to intervene at these points in the production process in order to guarantee safe, high-quality products.
The principles of the HACCP system
HACCP works preventively. The system scrutinizes all stages of the food production process in advance and minimizes risks. This is how the HACCP system works in detail:

Risk analysis
The hazard analysis identifies all potential hazards that could occur during the entire production process. These include biological, chemical or physical hazards that could affect safety and quality.
Determination of critical control points
The control points (CCP or Critical Control Points) are a central element of the HACCP principles. The critical points are locations in the production process where certain measures must be taken to control or eliminate the identified hazards.
Definition of limit values
Specific limit values are now set for each of the control points. These may, for example, relate to the temperature, humidity or pH value at a certain point in production. The critical limit values must not be exceeded so that the safety of the food can be guaranteed.
Monitoring the CCPs
Monitoring is set up to ensure that the defined limits at the control points are actually adhered to. The monitoring procedures can be continuous or regular, depending on what is possible and necessary at the individual CCPs.
Corrective measures
What happens if an inspection reveals that a limit value has been exceeded at one of the critical points? This is precisely the question that HACCP defines in advance. In order to ensure that no unsafe products can enter distribution, these predefined measures are then applied in the event of anomalies.
Verification and documentation
In addition to ongoing monitoring, the entire HACCP system is regularly checked and validated. This ensures that everything works effectively and that food safety is guaranteed.
All processes, monitoring and measures taken are documented in detail. These records can later be used to prove compliance with safety standards or to rectify potential problems.
